The product obtained from sugar beet, after various processes, reaches the cooking bubble in the form of syrup which, after a cooking process at about 80° in a vacuum, at low pressure, is transformed into a mixture of crystals, called “cooked mass” which will then be sent to a centrifuge to obtain the first sugar produced.
