Cooking bubbles

The cooking bubble is mainly used in sugar factories to obtain the “cooked mass”. The product obtained from sugar beet, after various processes, reaches the cooking bubble in the form of syrup which, after a cooking process at about 80° in a vacuum, at low pressure, is transformed into a mixture of crystals, called “cooked mass” which will then be sent to a centrifuge to obtain the first sugar produced.
